Five hundred covers in a marquee: what we learned

2 April 2025

Marquee event space set for a seated dinner

A marquee turns a dining room into a construction project. At five hundred covers, the hard part is the distance between the kitchen and the table.

The kitchen is not next door

In a marquee, the kitchen, the pass and the tables are separate structures, sometimes a long walk apart. Food must travel, hold its temperature and arrive together. Distance, heat and uneven ground, none of which a restaurant ever has to consider, decide the quality of every plate.

  • A route from kitchen to pass to table, walked before the event
  • Plating stations close enough to keep food hot
  • Runners sized for the distance, not just the headcount
  • Power, lighting and water confirmed in advance

Staff the structure first

At this scale, supervision matters as much as numbers. Sections need leads, leads need a coordinator, and the coordinator needs a direct line to the kitchen. We staff that structure first, then fill the floor.

At five hundred covers, a service is only as strong as its weakest handoff.

Rehearse the whole run

A walk-through with the kitchen and the floor, from first plate to last clear, is the best afternoon you can spend before the event. It turns a vast operation into a series of small, familiar steps.
