Training a barista bench before a cafe opening

21 August 2025

Cafe counter ready for the morning service

A café can be built in weeks. A team that pulls the same shot on opening day as on day one hundred takes longer.

The bench behind the bar

A new café opens under a spotlight. The queue is long, the menu is untested and the machine is unfamiliar. If the baristas are learning on the job, guests taste the learning. A trained bench, ready before the doors open, means the first cup they taste is the one you meant to serve.

  • Training on the café's own machine, menu and recipes
  • Drills for speed, not just technique
  • Milk, grind and extraction standards written down and tested
  • Reserve baristas trained to the same bar, ready to step in

Consistency is the product

People come back to a café for a reason they can rarely explain: the flat white tastes right, every time. That is not talent alone. It is shared standards, repeated practice and a bench deep enough that a missing barista never changes the cup.

A café's reputation is made in its first week. The training that made it happened the month before.

Practise the rush

Calm practice only goes so far. Before opening we simulate the real thing: full tickets, mixed orders, a line out the door. By the time the first real queue forms, the pressure already feels familiar.
