Spago Majilis runs two services in the same room: a seated fine-dining floor and a majlis format where the table is shared, the pace is slower and the service is read rather than announced.
Melas recruited the full front of house — management, head waiters, floor, sommelier and hosts — and built the onboarding that lets one team hold both formats.

What changed
We built a two-part trade test — one plated service, one majlis — and hired only against both. Twenty-seven roles were filled in five months, with the first head waiter on the floor nine days after the brief.
The room now runs both formats with a single rota, and the management layer was promoted entirely from the opening intake.
