Wadi AlFann sits in open desert: everything a service needs — water, power, cold storage, the team itself — arrives on site and leaves with it. There is no room to absorb a mistake locally.
Melas deployed 75 people for two weeks, housed and rotated on site, covering the seated dinners, the roaming service between the installations and the back-of-house support.

What changed
We built the rotation before the roster — two shifts, staggered rest days, and leaders paired so no pod ever lost both at once. 75 people came in on day one and 75 finished on day fourteen.
The closing dinner was served in a single seating, on time, with the roaming service across the installations running in parallel.
